Cucumbers are related to melons and squashes, and are almost always eaten raw or pickled. Extremely high in vitamins and nutrients, cucumbers are famous for their anti-inflammatory properties, both inside and outside the body. Sliced cucumbers are good for reducing inflammation around the eyes, helping to ease the pain of sunburned skin, and are a great addition to a salad.

The phrase “cool as a cucumber” comes from the amazing fact that cucumbers have been found to be up to 20 degrees cooler on the inside than the air around them!
